  • 4 cups dry macaroni
  • 1 egg, beaten
  • 1 stick of butter
  • 1/4 c flour
  • 2 1/2 cup evaporated milk
  • 2 cups shredded triple cheddar cheese
  • 1 cup shredded Colby Jack cheese
  • 1 cup shredded American cheese
  • 2 teaspoon dry mustard
  • salt and pepper to taste
  • Preheat oven 350 degrees F

In a large pot bring 6 cups of water to a boil. Stir in macaroni to the boiling water cook until slightly firm (do not overcook).  Drain noodles and set aside.  In a separate pot melt butter on medium heat, add flour, stir constantly until well blended and creamy.  Slowly add milk and egg, stir until thickened.  Remove from heat.  Stir in cheeses until well blended, the sauce will thicken as cheese melts.  Take a large bowl and mix drained macaroni with cheese sauce until well blended. Add dry mustard, salt, and pepper.  Pour into buttered baking dish, top with extra cheese and bake until bubbly and golden brown. 20 - 25 minutes.
