APPLE PIE CREAM CHEESE EGG ROLLS

Ingredients

8 egg roll wraps

1 8oz package cream cheese

¾ c sugar

1 tsp vanilla flavoring

4 apples peeled, cored, and sliced thin

1 tsp lemon juice

1 ¼ tsp cornstarch

1/3 c water 

½ c packed brown sugar

¼ tsp ground nutmeg

½ tsp cinnamon

3 tblsp butter

1/3 c water 

Oil for frying

Directions

APPLE FILLING

Melt butter in a large skillet, add apples and cook for a couple of min to soften.  Add 1/3 c water, brown sugar, cinnamon, nutmeg and vanilla flavor and stir well on low-med heat.

Dissolve corn starch in the remaining 1/3 c water.  Add to apple mixture and bring to boil.  Boil until desired thickness.  Remove from heat.

Melt cream cheese, ¾ c sugar and 1 tsp vanilla flavoring in microwave (about 2 min) be careful not to overcook.  Stirring half way between. 

EGG ROLL

Place an egg roll wrapper on the counter so you are looking at a diamond.  Spread a tablespoon full of cream cheese on bottom half of diamond avoiding the edges.  Then place an ice cream scoop of apple filling on top of cream cheese.

Fold up the bottom corner of the wrapper, over the filling.  Fold the two side corners over the filling as well.  Roll away from you, moisten the top corner (with water) to seal.

Fry in oil heated at 350*F. for 1 min each side.  Allow to rest 5-10 min before serving.
